Carmelized Onion Dip
- 1 large Spanish onion, chopped (about 1-1/2 cups)
- 4 scallions, white and light green parts only, sliced
- 2 tablespoons extra virgin olive oil
- 14 teaspoon salt
- 14 teaspoon white pepper
- 1 cup light sour cream
- 12 cup light mayonnaise
- 12 cup whipped cream cheese
- 12 teaspoon garlic powder
- 12 teaspoon salt
- In a medium skillet, heat the oil over medium heat.
- Add the onions, scallions, 1/4 t. salt and white pepper.
- Reduce heat to medium-low and cook the onions until they turn a nice golden brown color, stirring frequently, about 20 minutes.
- Remove from the heat and let cool down.
- Meanwhile, combine the sour cream, mayonnaise.
- whipped cream cheese, garlic powder and 1/2 t. salt.
- When onion mixture has cooled, stir into sour cream mixture.
- Cover and refrigerate for a minimum of 2 hours.
- Enjoy!
