Szechwan Hot Pepper Beef Recipe
- 1 pound beef flank steak
- 2 tbsp. soy sauce
- 1 tbsp. dry sherry
- 1 teaspoon sugar
- Oil
- 8 dry warm red peppers, seeds removed
- 3 med. cloves garlic, crushed
- 2 fresh green chili peppers, seeds removed or possibly 1/4 c. canned diced green chilies, cut into matchstick pcs
- 1 carrot, cut matchstick
- 1 stalk celery, cut matchstick
- Cut beef lengthwise into halves.
- Slice each half across grain into 1/4 inch slices.
- Mix beef, soy sauce, sherry and sugar.
- Heat oil till warm.
- Add in warm red peppers.
- Cook over medium high heat till blackened.
- Throw away peppers, leaving oil.
- Add in beef and garlic and stir fry 2 min or possibly till beef is nearly done.
- Remove beef to hot platter.
- Add in green chili pepper, carrot and celery to oil.
- Stir fry till crispy tender.
- Add in beef, cover and cook till beef is just done (about 2 min).
- Serve with rice.
- Serve 4.
