Just One More Item! Spinach with Lightly Scrambled Egg
- 1 bunch Spinach
- 3 Eggs
- 1/2 packet Shimeji mushrooms
- 1/2 packet Enoki mushrooms
- 3 to 4 Shiitake mushrooms
- 1/2 tbsp Chicken stock granules
- 1 Salt and pepper
- 1/2 tbsp Soy sauce
- Rinse spinach and heat in microwave in heat-resistant dish for 3 minutes.
- While the spinach is cooking, shred the mushrooms.
- Crack the eggs into a bowl, add the chicken soup stock, and mix.
- Heat oil in the frying pan, and stir fry mushrooms with salt and pepper.
- When the mushrooms are tender, add the cooked spinach and fry together, then season with soy sauce.
- Evenly pour the whisked egg into the frying pan in a circular motion, and slowly blend.
- As soon as all ingredients are combined, remove from the heat and serve.
