Thanksgiving Flan Pie Recipe
- 1 env. unflavored gelatin
- 1/4 c. granulated sugar
- 3/4 teaspoon grnd cinnamon
- 1/2 teaspoon grnd ginger
- 1/2 teaspoon grnd nutmeg
- 1/4 teaspoon salt
- 4 egg yolks
- 1 c. dairy eggnog
- 16 ounce. mashed, cooked pumpkin
- 4 egg whites
- 1/2 c. sugar
- 2 c. graham crackers
- 1/4 c. granulated sugar
- 1/3 c. butter
- Cold Whip
- In a medium saucepan, mix gelatin, 1/4 c. sugar, spices and salt.
- Add in yolks, eggnog and pumpkin.
- Beat till mix is proportionately blended.
- Cook very slowly, stirring constantly, till gelatin dissolves and mix thickens slightly.
- Pour into a large bowl.
- Refrigerateabout 20 min, till cool.
- In a plastic bag, finely roll 1 package of graham crackers.
- Blend crackers, 1/4 c. sugar and melted butter together with a fork.
- Press onto bottom of a flan pan.
- Refrigerate30 min.
- Beat egg whites till foamy.
- Slowly beat in 1/2 c. sugar till meringue forms hard peaks.
- Fold into pumpkin mix.
- Spoon into flan pan.
- Refrigerateovernight.
- Serve topped with Cold Whip.
