Mabo Dofu
- 2 blocks tofu (12 oz.)
- 1/2 lb. lean ground beef
- 1/2 c. green onions, chopped
- 1 red pepper, minced
- 1 Tbsp. oil
- 2 Tbsp. ketchup
- 2 Tbsp. soy sauce
- 2 Tbsp. cooking wine
- 1/2 c. soup stock
- 1 Tbsp. cornstarch, dissolved in 1/2 c. water
- 3 Tbsp. peas
- 1 clove garlic, chopped
- 1 Tbsp. ginger, chopped
- Cut tofu into 1/2-inch cubes.
- Set aside and drain well.
- Heat oil in skillet.
- Add ginger, garlic, green onions and red pepper and stir over high heat.
- Brown beef.
- Add 1/2 tablespoon soy sauce and reduce to medium heat.
- Add ketchup, remainder of soy sauce, wine and soup stock.
- Bring to a boil.
- Add cornstarch liquid and stir until thickened.
- Add green peas.
