Way yummy zucchini and shrimp with couscous

  1. Prepare shallot, jalapeno, zucchini, and tomato.
  2. This recipe cooks up quick!
  3. Heat olive oil and the butter on medium-low heat.
  4. When you see a little bubbly action, add shallots and jalapeno.
  5. When they both are nice and soft, add zucchini, and cook for another 3-4 minutes, giving a few good stirs.
  6. When zucchini has softened a bit, add the shrimp.
  7. Cook a few more minutes, flipping them once or twice.
  8. Add cayenne, salt, and pepper.
  9. Let simmer a bit.
  10. Add diced tomato and a little bit of water and let everything simmer a few minutes.
  11. When shrimp looks just about cooked though, add the couscous and mix in with all the flavors.
  12. Cook 1-2 additional minutes.
  13. Yum!!!
