Squash Parmesan
- 2 medium squash
- 2 eggs
- 1/4 c. water
- 1/3 c. flour
- 1 c. fine dry bread crumbs
- cooking oil
- 8 oz. sliced Mozzarella
- 1/4 c. grated Parmesan cheese
- Italian tomato sauce
- 1/2 lb. ham or Prosciutto
- Cut
- unpeeled
- squash
- lengthwise into 1/4 inch slices. In large
- bowl,
- beattogether
- eggs and water.
- Coat squash slices intlour,tip
- in
- egg mixture, then coat with bread crumbs.
- In large
- skillet,
- cook
- squash
- slices
- in a small amount
- of hot oil until lightly browned, turning once.
- Drain on paper toweling.
- In bottom on 10 x 6 x 2-inch baking dish, spread bottom with sauce, about 1/2 cup.tayer squash slices, cheese and meat; cover
- with sauce.tepeat layers.tprinkle with Parmesan cheese. Bake uncovered
- in
- 350u0b0 oven for 20 to 30 minutes.
