Strawberry Pie

  1. Melt marshmallows and strawberry juice over low heat, folding until mixture is smooth.
  2. Add coloring and cool.
  3. Beat egg whites until frothy.
  4. Gradually beat in sugar until meringue peaks.
  5. Add salt, then gently whip in the cooled marshmallow mixture.
  6. Fill pastry shell with very firm ice cream.
  7. Cover with layer of strawberries.
  8. Top with meringue swirled gaily.
  9. Place in boiler about 3 to 6-inches away from flame; brown quickly.
  10. Tuck unstemmed strawberries in swirl and serve immediately.
