Melt In Your Mouth Blueberry Cake
- 2 egg whites
- 1 c. powder sugar, divided
- 1/2 c. butter
- dash of salt
- 1 tsp. vanilla
- 2 egg yolks
- 1 1/2 c. all purpose flour
- 1 tsp. baking powder
- 1/3 c. of milk
- 1 1/2 c. blueberries
- granulated sugar
- Heat oven to 350u0b0.
- Grease an 8 x 8-inch baking pan and set aside. In small bowl of electric mixer, beat egg whites until stiff. Add 1/4 cup of sugar to egg whites and beat until sugar is well combined.
- Set aside.tn a separate bowl, cream butter, salt, and vanilla.tdd remaining 3/4 cup sugar and egg yolks. Beat until light and fluffy.
- Sift together flour and baking powder. Add alternately with milk to butter and sugar mixture. Fold in reserved egg white mixture and blueberries.
- Pour batter into prepared baking pan and sprinkle the top with granulated sugar. Bake for 50 minutes.
- Makes 9 servings.
