Melt In Your Mouth Blueberry Cake

  1. Heat oven to 350u0b0.
  2. Grease an 8 x 8-inch baking pan and set aside. In small bowl of electric mixer, beat egg whites until stiff. Add 1/4 cup of sugar to egg whites and beat until sugar is well combined.
  3. Set aside.tn a separate bowl, cream butter, salt, and vanilla.tdd remaining 3/4 cup sugar and egg yolks. Beat until light and fluffy.
  4. Sift together flour and baking powder. Add alternately with milk to butter and sugar mixture. Fold in reserved egg white mixture and blueberries.
  5. Pour batter into prepared baking pan and sprinkle the top with granulated sugar. Bake for 50 minutes.
  6. Makes 9 servings.
