Cheesy chicken and little tree casserole
- 1 bbq chicken
- 1 head of broccoli, chopped
- 3/4 cup sour cream
- 4 tbsp cream cheese
- 1 cup tasty cheese, grated
- 1/4 cup parmesan cheese
- 1 cup chicken stock
- 1/4 cup milk
- 1/2 tsp garlic powder
- 1/2 cup tasty cheese, grated extra
- 1 sprinkling of parmesan, extra
- 1 small amount of ground black pepper
- While the broccoli is being steamed or boiled (not too much, you still want it slightly crunchy), rip the meat off the chicken in small pieces
- In a medium saucepan, heat chicken stock until boiling.
- Reduce heat to low and stir in sour cream, cream cheese and milk.
- When dissolved, add cheeses, garlic powder and approximately 1/8 tsp ground cracked pepper.
- Whisk until smooth
- Pour half the sauce into the bottom of a rectangular casserole dish
- Layer the chicken and broccoli over this and pour the remaining sauce over the top and sprinkle with the extra tasty cheese and a more parmesan (not too much or the flavour can become too strong and salty)
- Bake at 180C for 15-20 minutes
