Peanut Sauce For Sirloin Tips Or Veal
- 3/4 c. raw peanuts, blanched and ground
- 4 sprigs parsley
- 2 lb. sirloin tips, cut in strips
- 1/4 c. peanut oil
- 1 clove garlic
- 1 small onion, chopped fine
- 3 tomatoes, peeled and chopped
- 1 tsp. sugar
- 1/4 tsp. nutmeg
- 1/4 tsp. thyme
- 1/2 tsp. oregano
- 1 1/2 c. beef stock (canned broth may be used, but omit the salt)
- 1 tsp. salt
- 1/2 c. dry white wine
- 1/2 tsp. freshly ground black pepper
- Grind
- the
- nuts
- and parsley and set aside.
- Saute the meat intil
- until browned on all sides.
- Add garlic, onion, tomatoes and
- sugar.
- Cook
- until
- liquid has evaporated from tomatoes. Discard garlic.
- Add nuts and parsley.
- Add nutmeg, thyme
- and oregano
- and
- brown.
- Add
- stock,
- wine,
- salt and pepper.took very slowly adding more wine or water if necessarytntil
- meat istery
- tender.
- It
- should take about 30 minutes and the sauce should be very thick.
