Refrigerator Cheese Cake

  1. Blend butter, 1/4 cup sugar, crumbs and cinnamon.
  2. Line spring-form pan with 3/4 of mixture.
  3. Soften gelatin in 1/2 cup water.
  4. Cook egg yolks, remaining sugar and water in double boiler until thickened.
  5. Add gelatin.
  6. Beat into cheese with lemon juice, rind and salt.
  7. Chill; beat well.
  8. Fold in cream with stiffly beaten egg whites.
  9. Pour onto crumbs.
  10. Sprinkle with remaining crumbs.
  11. Chill until firm.
  12. Serves 12.
