Bernice Herb's Corn Fritters Recipe

  1. In a heavy skillet cook bacon over moderately low heat till crisp.
  2. Transfer bacon to paper towels to drain and reserve bacon fat in a heatproof bowl.
  3. Crumble bacon.
  4. Working in a large bowl and using the largest holes of a 4-sided grater, grate corn till you have about 1/2 c.. Lightly beat egg and add in to corn.
  5. Stir in flour, sugar, baking pwdr, salt, and pepper till combined well.
  6. In skillet heat 1 Tbsp.
  7. reserved bacon fat over moderate heat.
  8. Working in 2 batches, form fritters by dropping 1/8-c. measures of batter for each into skillet and cook till golden, 1 to 2 min on each side.
  9. Serve fritters hot with bacon and syrup or possibly tomatoes.
  10. Makes about 6 fritters,serving 2 or possibly 3 as a side dish.
  11. Although these are called fritters, they more closely resemble pancakes.
  12. Accompaniment: pure maple syrup or possibly sliced tomatoes
