Jalapeno Cheese Stuffed Chicken
- 13 cups Queso Panela, Shredded
- 1/4 cups Chive And Onion Cream Cheese Spread
- 2 whole Boneless, Skinless Chicken Breasts
- 3 whole Jalapenos, Deseeded And Deveined
- 6 slices Bacon
- Salt To Season
- Turn on the grill to a medium heat.
- In a small bowl combine the queso cheese and cream cheese.
- Set aside.
- Cut each chicken breast down the center but leave one side intact (basically you are butterflying them).
- Open each chicken breast and spread 1/2 the cheese mixture onto one side of each chicken breast.
- Place strips of the jalapeno on top of the cheese mixture.
- Close the chicken breasts and season each side with salt.
- Fasten the ends and middle of chicken breasts with toothpicks.
- Now wrap 3 slices of bacon around each chicken breast and fasten the bacon together with toothpicks to ensure it holds.
- Cook on the grill for about 5 minutes per side or until done.
- Caution: there may be flare ups due to bacon fat and cheese drippings.
- If thats the case, move it to indirect heat and continue cooking until the chicken is done.
