Jalapeno Cheese Stuffed Chicken

  1. Turn on the grill to a medium heat.
  2. In a small bowl combine the queso cheese and cream cheese.
  3. Set aside.
  4. Cut each chicken breast down the center but leave one side intact (basically you are butterflying them).
  5. Open each chicken breast and spread 1/2 the cheese mixture onto one side of each chicken breast.
  6. Place strips of the jalapeno on top of the cheese mixture.
  7. Close the chicken breasts and season each side with salt.
  8. Fasten the ends and middle of chicken breasts with toothpicks.
  9. Now wrap 3 slices of bacon around each chicken breast and fasten the bacon together with toothpicks to ensure it holds.
  10. Cook on the grill for about 5 minutes per side or until done.
  11. Caution: there may be flare ups due to bacon fat and cheese drippings.
  12. If thats the case, move it to indirect heat and continue cooking until the chicken is done.
