Bacon & Onion Masa Cakes

  1. Cook bacon in large skillet on medium heat 5 min., stirring occasionally.
  2. Add onions and cumin; cook an additional 5 min., stirring frequently.
  3. Cool.
  4. Mix masa harina, cheese, water and salt until well blended.
  5. Place on lightly floured surface.
  6. Knead 5 min.
  7. or until smooth and elastic.
  8. Add bacon mixture; knead until well blended.
  9. Divide into 10 balls.
  10. With moistened hands, form each ball into a circle, about 1/2 inch thick.
  11. Add dough circles, in batches, to large skillet sprayed with cooking spray.
  12. Cook on medium-high heat 2 to 3 min.
  13. on each side or until lightly browned on both sides, spraying skillet with additional cooking spray between batches.
