Apple and Oat Bran Muffins (Ovo Lacto)

  1. Combine dry ingredients.
  2. Mix wet ingredients in a small bowl.
  3. Add to wet ingredients to dry ingredients until just moistened.
  4. Mix apple into batter.
  5. Spray muffin cups with non-stick spray and spoon about 1/4 cup batter into each muffin cup.
  6. Bake in a 375F (190C) oven for 18 to 20 minutes or until a toothpick inserted near the center comes out clean.
  7. 12 Muffins.
  8. NOTE: can store batter, tightly covered, in the fridge for up to 5 days.
