Fruited Melon Boat

  1. Dissolve gelatin in boiling water; cool slightly.
  2. Blend dissolved gelatin and cottage cheese in electric blender container until smooth.
  3. Refrigerate until slightly thickened.
  4. Scoop out melon, leaving 1/2-inch shell; invert shells onto paper towels to drain.
  5. Chop enough melon to measure 1/2 cup.
  6. (Reserve remaining melon for another use.)
  7. Stir chopped melon and strawberries into thickened gelatin; spoon into melon shells.
  8. R efrigerate until firm, about 3 hours.
  9. Halve melon shells to make 4 wedges.
