Vegetable Burger
- 2 cups diced mixed vegetables (sweet potato, carrot etc.)
- 1 cup red lentil
- 12 cup polenta
- salt or pepper
- 2 cups water
- curry (optional) or cumin (optional)
- Peel and dice all vegetables.
- Place all vegetables into a bowl/pot.
- Pour boiling water over dry ingredients.
- Cook in microwave for 10 minutes/ stove top until cooked.
- Mash vegetables add Polenta and spice mix well.
- May use burger maker, use polenta in burger maker as mixture may stick, or hand roll spoon fulls and roll in extra polenta.
- Lightly fry in pan may use extra light olive oil / or spray.
- Serve with salad.
