White Chocolate Cheesecake
- 8 1/2 oz. box chocolate wafers
- 3/4 c. butter/margarine, softened
- 1 lb. white chocolate
- 4 (8 oz.) pkg. cream cheese, softened
- 4 large eggs
- 1/4 c. sugar
- 2 Tbsp. vanilla extract
- Preheat oven to 350u0b0. Put chocolate wafers in blender & blend until crumbs form. Mix crumbs with 4 Tbsp. margarine and press into bottom and about 2 inches up sides of a 10 x 2 1/2 inch spring form pan that has been greased. Set aside.
- In a heavy saucepan over low heat melt white chocolate until smooth, stirring occasionally. In large bowl with mixer on low speed combine cream cheese and 1/2 c. margarine until smooth. Add melted white chocolate, eggs, sugar and vanilla, beat just until smooth. Pour mixture into pan with chocolate crust and bake for 1 hour. Cool on wire rack and refrigerate at least 4 hours before serving.
