Healthy Pumpkin Bread
- 14 cup butter, softened
- 12 cup applesauce
- 34 cup sugar
- 34 cup brown sugar
- 1 teaspoon vanilla
- 4 eggs
- 2 cups pumpkin puree (I used fresh)
- 1 12 cups flour
- 1 12 cups white whole wheat flour
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 34 teaspoon salt
- 1 12 teaspoons cinnamon
- 1 teaspoon ginger
- 14 teaspoon allspice
- 14 teaspoon nutmeg
- 18 teaspoon cardamom
- 12 cup buttermilk or 12 cup plain yogurt
- 1 cup chopped walnuts
- Heat oven to 350 degrees.
- Grease and flour the bottom of two 9 inch pans.
- In a large bowl cream butter and sugars.
- Add vanilla, eggs and mix.
- Add applesauce and pumpkin.
- In separate bowl whisk together the dry ingredients.
- Add half to pumpkin mix blending well.
- Add buttermilk or yogurt and blend.
- Add remaining flour mix and beat until smooth.
- Stir in walnuts.
- Pour into pans and bake for 60 - 65 minutes or until toothpick inserted in center comes out clean.
- Cool for 10 minutes and remove from pan.
