BOCA-Stuffed Baked Poblanos
- 1/2 tsp. olive oil
- 1/8 cup choppedchopped onion
- 1 peeled garlic clove
- 3 oz. BOCA Meatless Ground Burger
- 1/3 cup chopped seededchopped fresh tomato
- 1/3 cup frozen corn
- 1/8 tsp. ground cumin
- 1/8 tsp. ground black pepper
- 1 oz. KRAFT 2% Milk Shredded Mild Cheddar Cheese
- 1 poblano chile, roasted, peeled and seeded
- 1 Tbsp. choppedfresh cilantro
- 1/2 cup hot cooked rice
- Heat oil in medium saucepan on medium heat.
- Add onion and garlic (minced); cook 2 minutes, stirring frequently.
- Add ground burger, tomatoes, corn, cumin and black pepper; mix well.
- Cook 10 minutes, stirring occasionally.
- Stir in 1/2 ounce of the cheese.
- Remove from heat.
- Fill chile with 3/4 cup of the ground burger mixture.
- Place, filled side up, in a greased shallow baking dish; sprinkle with remaining 1/2 ounce of cheese.
- Bake at 350 F for 15 minutes or until cheese is melted.
- Sprinkle with cilantro.
- Serve with hot cooked rice.
