BOCA-Stuffed Baked Poblanos

  1. Heat oil in medium saucepan on medium heat.
  2. Add onion and garlic (minced); cook 2 minutes, stirring frequently.
  3. Add ground burger, tomatoes, corn, cumin and black pepper; mix well.
  4. Cook 10 minutes, stirring occasionally.
  5. Stir in 1/2 ounce of the cheese.
  6. Remove from heat.
  7. Fill chile with 3/4 cup of the ground burger mixture.
  8. Place, filled side up, in a greased shallow baking dish; sprinkle with remaining 1/2 ounce of cheese.
  9. Bake at 350 F for 15 minutes or until cheese is melted.
  10. Sprinkle with cilantro.
  11. Serve with hot cooked rice.
