Layered Enchilada Casserole

  1. Cook beef in 2-quart dish in microwave; drain.
  2. Stir in beans, seasoning mix and 1 cup water.
  3. Cook on High 5 minutes in microwave, stirring once.
  4. Pour sauce into pie plate.
  5. Dip both sides of tortillas in sauce.
  6. Layer beef mixture and dipped tortillas in microwave-safe 13 x 9 x 2-inch dish, cutting tortillas as necessary to fit.
  7. Sprinkle cheese all over top. Cover tightly with plastic wrap.
  8. Cook on Medium-high 10 minutes, turning dish once.
  9. Let stand 10 minutes before serving.
  10. May garnish with shredded lettuce, chopped tomato and sliced pitted black olives.
