Fried Fennel

  1. Preaheat oven to 200F.
  2. Line baking sheet with paper towels.
  3. Place 1/3 of fennel in large bowl.
  4. Add 3 tablespoons flour and toss to coat.
  5. Heat 1/4 cup oil in heavy large skillet over medium-high heat.
  6. Add fennel and fry until golden brown, turning with tongs, about 3 minutes.
  7. Using slotted spoon, transfer fennel to paper towels; drain.
  8. Keep warm in oven.
  9. Repeat with remaining fennel, flour and oil in 2 more batches.
  10. Season with salt and pepper.
