Citrus and Spinach Salad

  1. Heat dry skillet over medium heat.
  2. Add almonds, cook stirring, until lightly browned, about 2 minutes.
  3. Remove from skillet, cool.
  4. In serving bowl toss spinach with hearts of artichokes, oranges, bean spouts and almonds.
  5. Stir cilantro and grated orange into dressing.
  6. Just before serving drizzle dressing over salad.
