Candied Bananas
- 6 each bananas green-tipped
- 1/4 cup butter or margarine
- 1/2 cup molasses
- 1/4 teaspoon salt
- 2 teaspoons lemon zest grated
- 1/4 cup lemon juice
- 1/2 teaspoon cinnamon
- 1/2 cup coconut flaked
- Preheat oven to 375F (190C).
- Peel bananas and cut in half lengthwise; place in shallow baking dish.
- Combine butter, molasses, salt, lemon rind, lemon juice and cinnamon.
- Pour over bananas, sprinkle with coconut.
- Bake for 15 minutes, basting occasionally.
