Cream Cheese Crabmeat Stuffed Jalapenos
- 1/3 cup cracker meal
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 dash cayenne pepper
- 1/4 cup milk
- 1 egg
- 1 clove minced garlic
- 2 tbsp finely chopped green pepper
- 2 tbsp finely chopped onion
- 2 tbsp finely chopped dill pickle
- 3 can flaked crabmeat
- 1 packages cream cheese
- 1 can whole jalapenos
- 1 cup milk
- 2 eggs
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 dash cayenne pepper
- 2 cup cracker meal
- Combine cracker meal, salt, black pepper, cayenne pepper.
- Add milk, egg.
- Add garlic, green pepper, onion, dill pickle.
- Completely drain crabmeat so it's dry; add to mixture.
- Cut jalapenos in half lengthwise, pit and rinse.
- Fill pepper halves with cream cheese; press on a thin layer of crab mixture, covering the pepper.
- Place on wax papered tray, freeze about 30 minutes.
- Breading: Combine milk, eggs, salt, black pepper, cayenne pepper.
- Dip peppers in egg mixture, roll in cracker meal, repeat; deep fry at 365F until golden brown.
- Makes about 30 peppers.
