Vegetable Casserole(Great Low-Fat Recipe)
- 1 pkg. frozen spinach, thawed
- 1 pkg. frozen green beans, thawed
- 2 medium yellow squash, sliced
- 2 medium tomatoes, chopped
- 1 can cream of mushroom soup
- 1 tsp. garlic powder
- 2 tsp. Italian seasoning, separated
- 1 tsp. black pepper
- 1 c. grated Mozzarella cheese, separated
- 1 c. breadcrumbs
- 1/4 c. butter, melted
- Combine all ingredients except breadcrumbs, butter, 1/4 c. cheese and 1 tsp.
- Italian seasoning.
- Transfer to a casserole dish.
- Sprinkle top with remaining cheese.
- Combine breadcrumbs and remaining Italian seasoning and sprinkle on top.
- Drizzle butter over top.
- Cover dish and bake at 350u0b0 for 30 minutes.
