Wes' Chili With Beans
- 4 qt. whole tomatoes
- 1 qt. tomato juice
- 1 qt. water
- 2 (6 oz.) cans tomato paste
- 1 (8 oz.) can tomato sauce
- 1 pkg. onion soup mix
- 3 large fresh onions, diced
- 1 stalk celery, diced
- 1/4 c. chili powder
- 1/2 tsp. Tabasco sauce
- 1 Tbsp. Worcestershire sauce
- 1/4 tsp. cumin
- 1/2 tsp. crushed red pepper
- 1/4 tsp. oregano
- salt to taste
- dash of pepper
- 1 lb. hamburger
- 1 lb. ground turkey
- 1/2 lb. sausage
- 1 qt. kidney beans
- 1 qt. bird egg beans
- 1 qt. pinto beans
- In large pot or Dutch oven, lightly brown hamburger, sausage and turkey over medium heat.
- Drain and add onions, onion soup mix, celery and tomato items.
- Bring to a slow boil; add remainder of spices and bring back to boil.
- Cook for about 45 minutes at a slow boil.
- Add 1 quart water and all beans.
- Bring back to boil, cover and continue to cook slowly for 4 to 6 hours, stirring occasionally.
- Serve hot with crackers and fresh corn bread.
- Makes about 2 gallons.
