Stuffed Mushrooms

  1. Preheat oven to 350F Wash, trim and dry mushrooms thoroughly.
  2. Remove stems.
  3. Finely chop enough stems to measure 1/3 cup.
  4. Melt 2 tbsp.
  5. butter in skillet.
  6. Cook and stir chopped mushroom stems, green pepper and onion in butter until tender - about 5 minutes.
  7. Remove from heat; stir in remaining ingredients except mushroom caps and 1 tbsp.
  8. butter.
  9. Melt 1 tbsp.
  10. butter in shallow baking dish.
  11. Fill mushroom caps with stuffing mixture and place filled side up in baking dish.
  12. Bake 15 minutes, broil 3-4 inches from heat for 2 minutes.
  13. Serve hot.
