Green Tomato Pickle
- 1 gal. tomatoes
- 6 large onions
- 3 c. sugar
- 1/2 lemon, sliced thin
- 2 pods red pepper, chopped
- 1 pod red pepper, sliced thin
- 3 c. vinegar
- 1 Tbsp. black whole pepper
- 1 Tbsp. whole cloves
- 1 Tbsp. whole allspice
- 1 Tbsp. celery seed
- 1 Tbsp. ground mustard
- 1 piece whole ginger
- Cut green tomatoes and onions.
- Cover with 1/2 cup lime to 1 gallon water.
- Let stand overnight.
- Next morning, drain water from tomatoes and rinse well.
- Tie spices in cheesecloth bag.
- Add bag of ingredients to tomatoes and onions.
- Cook 1/2 hour stirring occasionally.
- Remove spice bag.
- Pack into jars, cover with syrup and garnish with slices of pepper.
- Seal.
- Simmer in hot water bath for 15 minutes.
