Cumin Potato Latkes With Corn Relish
- 1 (20 ounce) package Simply Potatoes Shredded Hash Browns
- 2 eggs
- 2 tablespoons flour
- 1 teaspoon cumin
- 1 teaspoon salt
- 1 tablespoon canola oil
- 1 12 cups frozen corn, thawed
- 1 cup tomatoes, diced
- 1 cup red pepper, seeded and diced
- 12 cup green onion, diced
- 14 cup fresh cilantro, chopped
- 12 teaspoon salt
- In a medium bowl mix hash browns, eggs, flour, cumin, and salt.
- Form potato mixture into four equal sized patties.
- Heat oil in large skillet over medium heat.
- Cook potato latkes 4-5 minutes per side, until golden.
- Meanwhile, mix corn, tomato, red pepper, green onions, cilantro, and salt in a small bowl.
- Remove latkes from heat and plate.
- Top each latke with one-fourth of tomato mixture.
- Salt to taste and enjoy!
