Cumin Potato Latkes With Corn Relish

  1. In a medium bowl mix hash browns, eggs, flour, cumin, and salt.
  2. Form potato mixture into four equal sized patties.
  3. Heat oil in large skillet over medium heat.
  4. Cook potato latkes 4-5 minutes per side, until golden.
  5. Meanwhile, mix corn, tomato, red pepper, green onions, cilantro, and salt in a small bowl.
  6. Remove latkes from heat and plate.
  7. Top each latke with one-fourth of tomato mixture.
  8. Salt to taste and enjoy!
