Mediterranean Tuna Potato Salad

  1. Cook potatoes in boiling water for 12 to 15 minutes or until tender.
  2. Drain and cool under running cold water.
  3. Steam green beans in microwave until just tender, about 4 to 5 minutes.
  4. Cool immediately under running cold water.
  5. Drain tuna.
  6. Cut potatoes in halves and place in a large bowl.
  7. Add green beans, tuna and tomatoes.
  8. Whisk vinegar and mustard into olive oil until thick and creamy.
  9. Whisk in capers and oregano.
  10. Pour dressing over potato and tuna mixture and toss.
  11. Divide salad greens among individual plates.
  12. Top with potato and tuna salad.
