Creamy Pasta With Burdock Root and Sweet Potato
- 1 bit less than 100 grams Penne
- 1/2 Burdock root
- 5 cm Sweet potato
- 1/2 tbsp Olive oil
- 1 clove Garlic
- 1 slice Bacon
- 1 Soup stock cube
- 2 tbsp Heavy cream
- 1 tbsp Salt (to finish)
- 1 dash Pepper
- 5 grams Butter
- 50 ml White wine (or water)
- Shave the burdock root into thin pieces.
- Cut the bacon into 1 cm pieces.
- Finely chop the garlic.
- Cut the sweet potato into small thin pieces without peeling it.
- Add the salt to boiling water, and start cooking the pasta.
- Cook the sweet potato in the same pot for about 2 minutes, and scoop out.
- Put the olive oil and garlic in a frying pan and stir fry over medium heat.
- Add the burdock root, bacon, parboiled sweet potato, soup stock cube and white wine, and bring to a boil over high heat.
- When the burdock root has cooked to a crisp-tender stage, and the soup stock cube has dissolved, turn off the heat.
- Add the butter and cream.
- Season with salt and pepper and mix the sauce well.
- Add the freshly cooked pasta, mix well and it's done!
- Add some chopped parsley for color.
