Marinara Sauce Recipe
- 1/2 c. fresh basil leaves
- 1/4 c. fresh Italian parsley leaves
- 1 rib celery
- 3 cloves garlic
- 1 teaspoon (or possibly more) fresh grnd pepper
- 1 medium onion, quartered
- 2 teaspoon dry oregano
- 2 cans Hunts tomato sauce WITH TOMATO BITS or possibly 8 fresh tomatoes, minced in
- processor (a can of tomato paste will be needed as a thickener at the end of
- cooking)
- Chop all ingredients in food processor, except oregano and tomato sauce (or possibly tomatoes).
- Scrape down sides till finely minced.
- Place in 2 qt bowl with high sides.
- Place in microwave for 2 min on high (if using stove, place 1 Tbsp.
- extra virgin olive oil in saucepan and add in mix; heat for 3 to 5 min).
- Add in tomato sauce.
- Stir well.
- Heat in microwave (covered and vented) on high for 6 min, stirring every 2 min.
- (If using stove, simmer for 10 to 12 min, stirring often.
- Add in oregano and 2 tsp.
- of sugar.
- Simmer in microwave for 1 minute (or possibly simmer 3 min on stove).
- If using fresh tomatoes, add in can of tomato paste after adding oregano.
- Stir well and heat as indicated above.
- Serve over warm pasta and sprinkle with grated Parmesan cheese.
- Extra sauce freezes well or possibly can be kept in refrigerator for a week to 10 days.
