Pineapple Black Bean Salsa
- 1 can (16 0z. Can) Black Beans, Drained And Rinsed
- 3 Tablespoons Lime Juice
- 1/2 cups Red Onion, Chopped
- 13 cups Cilantro, Minced
- 1 can (20 Oz. Can) Pineapple, Chunks
- 1 whole Jalapeno
- 1/2 teaspoons Sea Salt
- 1/2 teaspoons Pepper
- In a medium bowl, add rinsed and drained black beans.
- Pour lime juice over the beans and coat evenly.
- Add in chopped red onion.
- Add cilantro to the bowl as well.
- Take the pineapple and chop into smaller pieces (chunk size is too large for salsa); add to the bowl.
- Slice open the jalapeno, removing the seeds and white pith on the inside.
- Mince into small pieces and add to the bowl of salsa.
- Dash with salt and pepper.
- Mix the entire contents of the bowl throughly, cover and refrigerate until cold.
- Serve with tortilla chips, on top of grilled chicken.
