Roasted Vegetable Wrapped Sandwich

  1. Prepare salad dressing mix as directed on package with vinegar and oil.
  2. Pour dressing over vegetables; toss lightly.
  3. Spoon into 15x10x1-inch baking pan.
  4. Bake at 425F for 20 minutes or until vegetables are tender, stirring occasionally.
  5. Layer tortillas with vegetable mixture and cheese.
  6. Place on cookie sheet.
  7. Broil 2 minutes or until cheese is melted.
  8. Wrap up.
