Hearty Potato Casserole

  1. Defrost hash brown potatoes and combine in large mixing bowl with 1/2 cup melted butter.
  2. Season with salt and pepper.
  3. Add chopped onion, cream of chicken soup, sour cream, and grated cheese.
  4. Blend thoroughly.
  5. Pour into buttered 3-quart casserole.
  6. Mix 1/4 cup melted butter with crumbs.
  7. Sprinkle over potato mixture.
  8. Bake at 350F for 45 minutes.
  9. For an entree, add 2 cups cooked diced chicken or ham to casserole.
