Rainbow Meal Salad

  1. Blend olive oil with orange juice; season with favorite herbs or salt-free seasoning if desired.
  2. Cook green soybeans (edamame) according to package directions.
  3. Combine mushrooms, carrots, peppers, soybeans and orange juice mixture; divide into 4 equal portions.
  4. Serve each portion atop 1 cup each arugula and lettuce.
  5. Complement each salad with 8 WHEAT THINS crackers on the side.
  6. Enjoy 1 banana per serving for dessert.
  7. Serve each person an 8 fl oz glass of milk with the meal.
