Amish Oatmeal Cookies

  1. Grind raisins
  2. and
  3. peanuts
  4. through food grinder using medium blade,
  5. set mixture aside.
  6. Sift together flour, baking powder, salt, nutmeg
  7. and
  8. cinnamon
  9. into
  10. very
  11. large bowl or dishpan. Cut in lard into the mixture using pastry blender or two knives until it forms fine crumbs.
  12. Add ground raisins and peanuts, sugar and
  13. quick
  14. cooking
  15. oats, mix well.
  16. Dissolve baking soda in buttermilk.
  17. Add
  18. molasses
  19. and 3 of the eggs. Beat with rotary beater until blended.
  20. Add the flour mixture and mix well.
  21. Drop by
  22. heaping tablespoonfuls about 3 inches apart.
  23. Flatten each with floured bottom of drinking glass to 2 1/2 inch
  24. round.
  25. Beat with rotary beater one egg until well blended.
  26. Brush tops
  27. of rounds with egg batter.
  28. Bake at 375u0b0 for 8 to
  29. 10
  30. minutes
  31. or until golden brown.
  32. Makes about 54 cookies.
