Sausages and White Beans

  1. Prick sausages all over with tines of a fork.
  2. In a Dutch oven, heat oil over medium heat.
  3. Add sausage and cook, turning, 5 minutes or until browned all over.
  4. Add carrot, celery and garlic.
  5. Cook, stirring, 1 minute.
  6. Add tomatoes and bring to a boil.
  7. Reduce heat to low, cover and cook 25-30 minutes, or until sausage is cooked through.
  8. Add white beans and simmer 5 minutes.
  9. Season to taste with salt and pepper.
