Monday Meat Pie Recipe
- Pastry for double crust pie
- 1 pound grnd beef
- 1/8 c. shortening
- 3 tbsp. instant chopped onion
- 1 1/2 c. tomato juice
- 1 pound can mixed vegetables, liquid removed
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 3 drops warm Tabasco
- 1/4 c. flour
- 1/2 c. ketchup
- Brown grnd beef and onion in shortening; drain well.
- Stir in 1 c. of tomato juice, mixed vegetables, salt, pepper, and Tabasco sauce.
- Cover and simmer for 10 min.
- Blend 1/2 c. tomato juice, flour, and ketchup.
- Add in to meat mix, stirring constantly, till thick.
- Place in 9 inch pastry lined pie tin.
- Place other crust on top.
- Fold under bottom crust, pressing to seal.
- Flute edge.
- Bake at 400 degrees for 25 min till brown.
