Comfort Stuffed Meatloaf
- 3 lbs ground beef
- 3 eggs
- 12 teaspoon ground pepper
- 1 teaspoon salt
- 2 teaspoons garlic powder
- 2 teaspoons parsley
- 6 ounces frozen chopped spinach (drained)
- 8 ounces black olives (chopped)
- 1 cup goat cheese
- 1 cup seasoned bread crumbs
- 2 cups chicken broth
- 10 ounces Simply Potatoes Shredded Hash Browns
- 14 cup ketchup
- 6 slices cooked bacon
- Place the ground beef in a large bowl and add the eggs, pepper, salt, garlic powder, parsley, flavored bread crumbs and chicken broth.
- Mix together well.
- Squeeze out all liquid from the chopped spinach.
- In a separate bowl combine the shredded potatoes with the chopped black olives and the drained chopped spinach.
- Mold half of the ground beef mixture into a ball and flatten it down and place in a roasting pan.
- Add the shredded potatoes, black olive and spinach mixture on top of the meat.
- Then place the goat cheese on top of that layer.
- Take the remaining ground beef and cover up the top of the loaf.
- Drizzle ketchup over the top of the loaf and place the bacon strips over the ketchup.
- Bake @ 375 degrees for 1 1/2 hrs or until done.
