Jalapeno Cornbread Casserole
- 1 c. yellow cornmeal
- 1 c. milk
- 2 eggs
- 3/4 tsp. baking soda
- 1/2 c. bacon drippings
- 1 can cream-style corn
- 1 lb. ground meat
- 1 lg. onion, chopped
- 1 lb. Dheddar cheese, grated
- 5 canned jalapenos
- Combine cornmeal, milk, beaten eggs, salt, soda, bacon drippings, and corn.
- Mix well, set aside.
- Brown meat until crumbly.
- Drain well on paper towels.
- Pour half of corn batter into well greased cast iron skillet or baking dish that has been dusted with cornmeal.
- Sprinkle grated cheese evenly over batter. Sprinkle meat evenly over cheese.
- Then sprinkle chopped onions and jalapenos over meat.
- Top with remaining cornbread batter. Bake at 350u0b0 for about 50 minutes.
