Chocolate Chip Orange Shortbread

  1. In a large bowl, combine all cookie ingredients and mix well with your hands.
  2. (If you use a mixer, it will not mix them well enough and break your mixer.)
  3. It is very important to MIX WELL!
  4. Divide dough into 4 parts; shape each into a ball.
  5. On ungreased cookie sheets, lightly press 2 balls per cookie sheet on opposite sides.
  6. Each dough ball should be about 6 inches round, 1/4 inch thick.
  7. With a knife, score each round into 8 wedges, leaving wedges in place.
  8. Prick each wedge 3 times with a fork.
  9. Bake at 325 degrees F. for 17-27 minutes.
  10. Cool 5 minutes and prick each wedge again 3 times.
  11. Cut into wedges and remove from cookie sheets.
  12. In a small saucepan, melt 3/4 cup chocolate chips and 1 tablespoon shortening until smooth, constantly stirring.
  13. Dip wedges into glaze or use a spoon to make cool designs.
  14. Let glaze set.
