Deluxe Crackers
- 2 c. rolled oats
- 1/2 c. pecans
- 1/2 c. coconut
- 1 1/2 c. flour
- 1 Tbsp. packed dark brown sugar
- 1 tsp. salt
- 2/3 c. water
- 1/2 c. corn oil
- coarse "pretzel" salt
- Preheat oven to 325u0b0.
- Place oats in a processor container and process until fine.
- Add pecans and process again.
- Add coconut and again process to blend well.
- Add flour, sugar, salt, water and oil.
- Process on "pulse" until a dough forms.
- Divide dough in half.
- Roll each half onto a 11 x 16-inch jelly roll pan.
- (A straight sided glass works well as a "rolling pin.")
- Dough will be thin.
- Sprinkle with salt.
- Cut dough into diamonds, squares or strips before baking.
- Bake about 30 minutes until crisp and browned.
- Store airtight.
- Great with dips or spreads or even plain.
