Easy Cheesy Stuffed Chicken

  1. Heat oven to 400 degrees F.
  2. Melt butter in medium saucepan on medium heat.
  3. Add zucchini and onions; cook and stir 2 min.
  4. or until tender.
  5. Remove from heat.
  6. Stir in stuffing mix and cheese until well blended.
  7. Insert fingers carefully between the meat and skin of each chicken quarter to form a pocket.
  8. Fill pockets with stuffing mixture.
  9. Place, skin-sides up, in large roasting pan.
  10. Bake 45 min.
  11. or until chicken is done (165 degrees F).
  12. Brush with barbecue sauce.
  13. Bake 5 to 10 min.
  14. or until heated through.
