Chasen'S Famous Chili, Updated
- 1/2 lb. dried pinto beans
- 2 c. canned chopped tomatoes
- 1 lb. seeded green peppers, coarsely chopped
- 1 1/2 lb. onions, coarsely chopped
- 1 1/2 Tbsp. oil
- 2 cloves garlic, finely chopped
- 1/2 c. parsley, finely chopped
- 1 Tbsp. oil
- 1/2 c. butter
- 3 lb. ground chuck
- 2 Tbsp. chili powder
- 1 Tbsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. ground cumin
- 1 can tomato soup
- 1 (8 oz.) can tomato sauce
- In large pot, wash beans; add water 2-inches above beans and soak overnight.
- Simmer in same water until tender.
- Add tomatoes and simmer 5 minutes.
- Saute green peppers slowly in oil in large pan for 5 minutes.
- Add onions and cook until tender, stirring frequently.
- Add garlic and parsley; stir well and add to tomato mixture.
