Caribou Sausage
- 4 pounds caribou
- 1 pound bacon ground
- 1 tablespoon salt
- 1 teaspoon allspice
- 2 tablespoons sugar
- 1 teaspoon coriander
- 1 1/2 teaspoons mustard seeds
- 6 cloves garlic minced
- 2 tablespoons black pepper
- 1 cup water cold
- Combine all ingredients, mix thoroughly and stuff into hog casings.
- Then once it forms sausages, fry until cooked.
- Serve.
