Basil Chicken Stir Fry
- 1 pound Chicken Breast
- 1- 1/2 teaspoon Minced Garlic
- 2 whole Shallots
- 1 whole Red Bell Pepper
- 1 Tablespoon Olive Oil
- 2 ounces, weight Basil
- Cooked Rice, To Serve
- 1 Tablespoon Thai Fish Sauce
- 2 Tablespoons Sweet Soy Sauce
- 2 teaspoons Chili Garlic Sauce
- Cut the chicken into thin long strips.
- Mince the garlic.
- Finely slice the shallots.
- Cut the red pepper into thin long strips.
- Combine the sauce ingredients in a bowl and set aside.
- Heat a wok over medium-high heat and add the oil when wok is almost smoking.
- Add sliced chicken and cook, turning occasionally with tongs, 3-4 minutes.
- Add garlic and shallots and cook 1-2 minutes.
- Add red pepper and cook 2 minutes.
- Add sauce and basil leaves, cook 1-2 minutes until basil leaves are slightly wilted.
- Serve over rice.
