Grain Free Muffins - Adaptable!

  1. Preheat oven to 350.
  2. Combine dry ingredients, including shredded coconut.
  3. In food processor, blend eggs for one minute til frothy.
  4. Add wet ingredients and blend for another minute.
  5. Pour wet ingredients into dry and stir to combine.
  6. Fold in any add-ins.
  7. Spoon mix into silicone muffin molds.
  8. Bake 20-25 minutes.
  9. Allow to cool 30 minutes before eating.
